An Easy Go-To Recipe With Chicken

The more I age and the more I blog here, the more I am enJOYing putting myself into my work or workandplay as I call it. 🙂

Anyhow, on that note, I thought I would start sharing some of my creative cooking ideas here on my blog. I have shared some recipes on my MaggiesVitaminsBlog but have now decided to start sharing here as well cause this is who I am. 🙂

I love cooking, thrift shopping, taking pictures, and writing to name just a few things that ignite my spirit. And I am sharing all of those things now here in this platform because that is what a blog is. It is like an online journal so PERF!

Now on to what I made for dinner last night. I love to just think about what I have on hand or what I need to use up in the fridge and then go from there. I would have fun on one of those cooking shows where you get a basket of ingredients :-). In fact, we are going to do something like this one night for fun with some friends of ours.

What’s Cookin?

Last night I had some chicken thighs in the fridge and wanted a quick and easy meal as I did not have a lot of time. So this is what I did.

I took a frying pan and put some olive oil and garlic. I then put onions (cut them any way you want) and celery and browned them a bit with salt and pepper of course. Then I added sliced chicken thighs and browned the whole thing up til it had some nice browning happening.

Next I added a simple jar of store bought tomato sauce. In this instance I used a grocery store’s personal line and it was a 4 cheese sauce.

I then cooked and simmered this for about 30 minutes to make sure the chicken was thoroughly cooked and the flavors melded.

When it was time to serve I made it work for everyone. Fresh boiled potatoes for my hubby and these were the first ones from his garden. He was excited to try them. It is so rewarding when you grow your own food and it is so nice to see many people doing this these days.

And as for my daughter and I we had some pasta.

So there you go… a simple dish that you could add any type of veggie to like peppers or mushrooms etc., pick a sauce of your choice and serve it however you like.
